Slow Cooker Revolution, Volume 2 (p57)

Aromatics
  • Microwave in bowl, stirring occasionally, 5 min.
  • Transfer to slow cooker.
2 c chopped onions
2 T minced garlic
1 T oil
1/2 t dried thyme
Cook
  • Stir in.
  • Low: 9-10 hr.
  • High: 6-7 hr.
1 lbs dried navy beans
7 c chicken broth
2 c water
8 oz ham steak, chopped
3 carrots, peeled, sliced 1/2 in
1 smoked ham hock, rinsed
Finish
  • Transfer ham hock to cutting board, cool slightly.
  • Shred into bite-size pieces, discard skin and bones.
  • Stir back in until heated through.
  • Stir in.
  • Season with salt and pepper.
1 t red wine vinegar
