Skillet Tamale Pie

Prep
  • Oven to 450°, middle rack.
Filling
Soften, ~ 5 min.
1 med onion, minced
2 T chili powder
1/2 t salt
Until fragrant, ~30 sec.
2 cloves garlic, minced
Bring to a simmer, breaking up meat, ~5 min.
1 lbs 90% ground sirloin
1 (15.5 oz) can black beans, drained and rinsed
1 (14.5 oz) can diced tomatoes, drained
  • Stir in.
  • Season to taste.
3 oz cheddar cheese, shredded
2 T cilantro, minced
Cornbread Topping
Whisk in large bowl.
3 3/4 oz all-purpose flour
3 3/4 oz yellow cornmeal
3 T sugar
3/4 t baking powder
3/4 t salt
3/4 t baking soda
  • Whisk in med bowl.
  • Stir into flour until uniform.
3/4 c buttermilk
1 large egg
Stir into batter just combined.
3 T butter, melted and cooled
  • Dollop batter over filling and spread into an even layer.
  • Bake at 450° until the cornbread is cooked through in center, 10-15 min.
