Scrambled Eggs

Beat Eggs
Beat with a fork until thoroghly combined and pure yellow. Do not overbeat.
8 eggs
2 yolks
1/4 c half & half
1/4 t salt
1/4 t pepper
Cook
  • Melk in 10 inch non-stick skillet over medium heat.
  • Add eggs.
  • Scrape with spatula until eggs begin to clump and spatula leaves a trail, 1 1/2-2 1/2 min.
  • Reduce to low and fold until clumped and slightly wet.
1 T butter
Half & Half Substitute
2 T + 2 t milk
4 t heavy cream
