Sausage, Bean, and Leek Soup

The Essential Pasta Cookbook (p39)

  • Brown.
  • Remove to small bowl.
1 lbs Italian sausages, sliced
Soften.
2 leeks, sliced
1 carrot, sliced
2 celery, sliced
Until fragrant, ~30 sec.
garlic
Cook, ~1 min.
2 T flour
Add and reduce a bit.
1/2 c white wine
Simmer 10 min.
6 c water
2 c beef stock
  • Return sausage.
  • Add and cook until pasta is al dente.
8 oz pipette or small shell pasta
1 (15 oz) can black beans
  • Off heat, stir in parsley.
  • Serve, sprinkled with parmesan.
