Roasted Green Beans

Cook's Illustrated (December 2005)

  • Oven to 450°, middle rack.
  • Line sheet pan with foil.
  • Spread beans on foil.
1 lbs green beans, trimmed
Drizzle and sprinkle, toss to coat.
1 T olive oil
1/2 t salt
  • Roast 10 min.
  • Remove and toss.
  • Roast until dark golden brown in spots, 10-12 min more.
  • Transfer to bowl.
  • Season to taste.

With Red Onion and Walnuts
Combine in small bowl, set aside.
1 T balsamic vinegar
1 t honey
1 t thyme, minced
2 cloves garlic, sliced thin
  • Line sheet pan with foil.
  • Spread on foil.
1 lbs green beans, trimmed
1/2 med red onion
Drizzle and sprinkle, toss to coat.
1 T olive oil
1/2 t salt
  • Roast 10 min.
  • Remove, drizzle with vinegar, toss.
  • Roast until dark golden brown in spots and starting to shrivel, 10-12 min more.
  • Transfer to bowl.
  • Sprinkle with walnuts.
  • Season to taste.
1/3 c walnuts, chopped and toasted
