Roasted Asparagus

Cook's Illustrated (April 2016)

Thick Asparagus
  • Oven to 500°, lowest rack.
  • Preheat rimmed baking sheet.
  • Trim bottom inch of spears and discard.
  • Peel bottom halves until white flesh is exposed.
2 lbs asparagus, 1/2 - 3/4 in thick
Toss.
2 T oil
salt
pepper
  • Remove preheated baking sheet.
  • Arrange in single layer.
  • Roast 8-10 min until undersides browned, tops vibrant green, and knife poke is easy.
Medium Asparagus
  • Oven to 450°, upper rack.
Snap off tough ends.
1 lbs medium asparagus
  • Mix in baking sheet and arrange in single layer.
  • Roast 10 - 15 min.
1.5 T oil
1/4 t salt
1/8 t pepper
