Basic Rice Pilaf

In large saucepan.
Rinse
Rinse in fine mesh strainer until water runs clear.
1 1/2 c basmati or long grain rice
Toast
Soften onion, don't brown, 4 min.
3 T butter
1 1/2 t salt
1 small onion, minced
  • Add rice, toast, until edges translucent, 3 min.
Season.
1 pinch pepper
Simmer
  • Bring to boil.
  • Cover, reduce to low, until liquid absorbed, 15-18 min.
2 1/4 c water, preheated
Rest
  • Remove from heat.
  • Remove lid, cover with cloth dish towel, replace lid.
  • Let stand 10-15 min.
  • Fluff with fork and serve.
