Pumpkin Soup

Italian by Whiteman et al (p192)

Soften.
1 medium onion
2 T butter
  • Bring to boil and simmer until squash is soft, 10 min.
  • Puree with in a blender.
1 medium butternut squash
3 1/2 c chicken stock
Add, bring to simmer, and cook until pasta is done, ~9 min.
1.5 oz orzo pasta
Mix in.
1/4 to 1/2 c cream
grated parmesan
Serve, drizzled with cream and sprinkled with nutmeg.
