Penne with Sausage and Peppers

  • Bring pasta water to a boil.
  • Meanwhile...
Aromatics
  • Soften.
  • Remove to bowl.
2 red bell peppers, sliced
1-2 green bell peppers, sliced
1 large onion, sliced
Sausage
Brown and cook through.
1 - 1 1/4 lbs hot Italian sausage links, sliced
Until fragrant, ~30 sec.
4 cloves garlic
robust herbs (thyme, oregano) (optional)
Start Pasta
Cook.
1 lbs penne
Assemble Sauce
  • Deglaze pan.
  • Reduce.
1/4 c white wine
  • Add, simmer 10 min.
  • Adjust seasoning.
1-2 (15 oz) cans diced tomatoes or fresh tomato wedges
previous peppers and onions
Finish
Stir in off heat, or garnish.
basil (optional)
  • Toss with penne in extra large bowl.
  • Serve, passing parmesan cheese.
