- Preheat oven to 200°, middle rack.
- Place wire rack in baking sheet in oven.
- Preheat pan or 350° griddle.

Stir in measuring cup.

- Add egg to cooled butter and whisk.
- Slowly wisk in milk.
- Stir liquid into flour until just combined. Should be lumpy.
- Batter may be held up to 1 hour.

- Pour 1/4 c portions into hot oiled pan or 350° griddle.
- Flip after bubbles appear, 1/2 - 2 min.
- Cook 1 - 1 1/2 min longer.
- Hold on wire rack in oven.
