Prep
  • Preheat oven to 200°, middle rack.
  • Place wire rack in baking sheet in oven.
  • Preheat pan or 350° griddle.
Stir in measuring cup.
2 c milk
1 T lemon juice
Pour butter into large mixing bowl and let cool.
3 T butter, melted
Flour
Whisk in large bowl.
10 oz flour
2 T sugar
2 t baking powder
1/2 t salt
1/2 t baking soda
Batter
  • Add egg to cooled butter and whisk.
  • Slowly wisk in milk.
  • Stir liquid into flour until just combined. Should be lumpy.
  • Batter may be held up to 1 hour.

Cook
  • Pour 1/4 c portions into hot oiled pan or 350° griddle.
  • Flip after bubbles appear, 1/2 - 2 min.
  • Cook 1 - 1 1/2 min longer.
  • Hold on wire rack in oven.
