Mashed Sweet Potatoes

2 lbs sweet potatoes, peeled, quartered lengthwise, sliced 1/4 inch
4 T butter, in 4 pieces
2 T cream
1 t sugar
1/2 t salt
  • Cook in large saucepan, covered, low heat, stirring occasionally, until potatoes fall apart when poked with a fork, 35-45 min.
  • Off heat, mash until smooth.
  • Season with salt and pepper.
