Farro with Mushrooms and Thyme

Cook's Illustrated (January 2013)

Make Basic Farro
  • In large saucepan.
Bring to boil.
2 qt water
1 T salt
  • Simmer, tender with slight chew, 15-20 min.
  • Drain well.
1 c farro
Enhance
  • In 12-inch skillet.
Until moisture evaporates, begins to brown, 5-8 min.
8 oz cremini mushrooms, trimmed and chopped coarse
1 shallot, minced
1 t minced thyme
1/4 t salt
Deglaze, until almost dry, 1-2 min.
2 T dry sherry
Until heated through, 1 min.
previous farro
  • Stir in off heat.
  • Season.
2 T minced parsley
1 t sherry vinegar
