Farro with Lemon and Herbs

Make Basic Farro
  • In large saucepan.
Bring to boil.
2 qt water
1 T salt
  • Simmer, tender with slight chew, 15-20 min.
  • Drain well.
1 1/2 c farro
Enhance
  • In 12-inch skillet.
Soften, 6-8 min.
3 T butter
1 onion, chopped
1/4 t salt
Until fragrant, 1 min.
1 clove garlic, minced
Add, until warmed through, 3-5 min.
previous basic farro
  • Off heat, stir in.
  • Season.
1/4 c chopped parsley
1/4 c chopped mint
2 t lemon juice
