Chicken Pomodoro

Cook's Country (March 2010)

Cook.
5 oz orzo (optional)
  • Pat dry, season with salt and pepper.
  • Brown, remove.
1 lbs chicken breasts
Sauté.
1 onion, chopped fine
Until fragrant.
4 cloves garlic
1 t dried oregano
1/4 t red pepper flakes
  • Stir in.
  • Return chicken.
  • Cover, simmer 10 min.
1 can diced tomatoes
1/3 c heavy cream
1/4 t salt
  • Remove chicken, tent with foil.
  • Simmer sauce uncovered, 5 min.
  • Off heat, stir in.
  • Server over orzo, or stir pasta into sauce.
1/4 c fresh basil, chopped
