Cherry Sauce

Cook's Illustrated (May 2018)

  • Combine in small bowl and microwave 1 1/2 min.
  • Stir.
  • Microwave until sugar is dissolved, 1 min.
12 oz frozen sweet cherries
1/4 c sugar
Combine in small bowl.
2 T kirsch
1 1/2 t cornstarch
  • Drain cherries in fine mesh strainer over small saucepan.
  • Return cherries to bowl.
  • Bring juice to simmer over med-high.
  • Stir in kirsch mixture and bring to boil.
  • Boil, stirring occasionally, until thickened and syrupy, 1-2 min.
  • Remove saucepan from heat and stir in.
  • Let cool completely before serving.
reserved cherries
1 T lemon juice
  • Refrigerate up to 1 week.
