Black Bean Soup

Slow Cooker Revolution by America's Test Kitchen (p36)

Ham hocks are very salty. Briefly rinse them off to get rid of the excess salt.
  • Soften in microwave, stirring twice, 5 min.
  • Transfer to slow cooker.
3 onions, minced
6 cloves garlic, minced
2 T oil
2 T chili powder
Stir in.
3 c low-sodium chicken broth
3 c water
1 lbs dried black beans
3 ribs celery, sliced 1/2 inch
2 carrots, sliced 1/2 inch
2 bay leaves
Nestle in.
1 smoked ham hock, rinsed
  • Low 9 - 11 hrs, or
  • high 5 - 7 hrs.
  • Transfer ham hock to cutting board, cool slightly.
  • Shred meat, discard rest.
  • Rest soup and skim fat.
  • Discard bay leaves.
  • Mash 1 c cooked beans.
  • Stir in shredded meat and smashed beans, heat through, 5 min.
  • Stir in.
  • Season.
