Basic White Rice

In large saucepan.
Rinse
Rinse in fine mesh strainer until water runs clear.

long grain white rice
Toast
Melt in large saucepan.
Add rice, toast, chalky and opaque, 1-3 min.

butter or oil
Simmer
Bring to boil.
Cover, reduce to low, until liquid absorbed, 18-20 min.

Rest
Remove from heat.
Remove lid, cover with cloth dish towel, replace lid.
Let stand 10-15 min.
Fluff with fork and serve.
