Basic White Rice

Cook's Illustrated (January 2010)

In large saucepan.
Rinse
Rinse in fine mesh strainer until water runs clear.
2 c long grain white rice
Toast
  • Melt in large saucepan.
  • Add rice, toast, chalky and opaque, 1-3 min.
1 T butter or oil
Simmer
  • Bring to boil.
  • Cover, reduce to low, until liquid absorbed, 18-20 min.
3 c water
1 t salt
Rest
  • Remove from heat.
  • Remove lid, cover with cloth dish towel, replace lid.
  • Let stand 10-15 min.
  • Fluff with fork and serve.
