Basic Couscous

Cook's Illustrated (January 2011)

Melt in medium saucepan over med-high heat until foaming subsides.
2 T unsalted butter
Add, stir frequently until just beginning to brown.
2 c couscous
1 t salt
  • Add to saucepan. (Don't heat - it will immediately come to a simmer.)
  • Remove pan from heat, cover, and let stand until grains are tender, about 7 min.
1 c water
1 c low-sodium chicken broth
Uncover and season with pepper.
Ground black pepper
