ATK Baked Potatoes

  • Oven to 450°, middle rack.
Combine in large bowl.
2 T salt
1/2 c water
  • Lightly prick with fork in 6 places
  • Evenly moisten in salt water.
  • Transfer to wire rack in rimmed baking sheet.
4 (7-9 oz) russet potatoes
  • Bake until center of largest potato is 205°, 45-60 min.
  • Remove and brush tops and sides with oil.
  • Bake 10 min more.
  • Remove.
  • Cut 2 slits, X shaped in each potato.
  • With dish towel insulator, push ends in to open up X and let steam escape.
  • Serve immediately.
Goat Cheese Topping
Mix in a bowl.
4 oz goat cheese
2 T extra-virgin olive oil
2 T parsley, chopped
1 T shallots, minced
1/2 t lemon zest
Season to taste.
